AKA: AJ, Reef Donkey, Puss Gut Amberjack are without question THE hardest fighting fish in the ocean. They get a bad rap because thier meat is often contaminated with a nasty looking, wormy parasite. However, some AJ's have no "worms", some 50% and some are nearly 100% contaminated, and the meat that is not "wormy" is very firm and despite the looks of the very unattractive parasites in other parts of the fish, the non-wormy parts are very good to eat. AJ is best prepared blackened or smoked. | |
